                                              Island Glass of Wine

                     Pasta Shells Florentine Chardonnay

Heat oven to 375°F.  Sauté sausage & mushrooms in medium saucepan. add Chardonnay and simmer until wine is reduced, set aside.  Mix spinach, mozzarella cheese, cottage cheese and egg white.  Fill each shell with a heaping tbsp of sausage mixture.  Place in a 10 x 12 baking dish; spoon sauce over shells.  Cover with foil.  Bake 30 to 40 minutes or until thoroughly heated.
                                        Serves 6 to 8

       ½lb Italian Sausage
      ¼lb Fresh Mushrooms (sliced)
      ½ cup Chardonnay
           + 1 glass
(Sip, Sip!) for Chef
      1pkg (10oz) Chopped Frozen Spinach
           (chopped & well drained)
      1 ¼ cup Shredded Mozzarella Cheese
      1 ¼ cup Cottage Cheese
      1 Egg White
      26-30 Jumbo Pasta Shells
           (cooked & well drained)
      1 jar (26oz) Marinara Sauce
