Pasta Shells Florentine Chardonnay

 

½lb Italian Sausage                                         1¼ cup Shredded Mozzarella Cheese

¼lb Fresh Mushrooms,  chopped                      1¼ cup Cottage Cheese

½cup Chardonnay                                            1 Egg White

         + 1 glass (Sip, Sip) for Chef                       26 - 30 Jumbo Pasta Shells, 

1pkg (10oz) Chopped  Frozen Spinach,                 cooked & well drained

                    thawed & well drained                 1 jar (26 oz) Marinara Sauce

 

     Heat oven to 375°F.  Sauté sausage & mushrooms in medium saucepan, add Chardonnay & simmer until wine is reduced, set aside.  Mix spinach, mozzarella cheese, cottage cheese, & egg white.  Fill each shell with a heaping  tbsp of sausage mixture.  Place in a 10 x 12 baking dish; spoon sauce over shells.  Cover with foil.  Bake 30 to 40 minutes or until thoroughly heated.          Serves 6 to 8.
